Hearty corn soup

It's been a while, I know. But I promise I have a good reason. Visiting family. Just those two words and no more explanation is required. :) Funnily enough, I was cooking more than usual but had no time for writeups. The shopping, talking and going out was occupying most of my time. I did however, make a few one-pot-meals which were hits and this is one of them.

In my family we love soups. This soup is very hearty and filling and simple to make. All it needs a few finely chopped veggies. Lucky for me, since I delegated all the chopping to my parents! After which I just gathered all the prepped veggies and hustled up the soup like a seasoned pro on the food network. If you don't have a helping crew at hand, however, feel free to add as many or as little your favorite vegetables. The resulting soup almost resembles a stew and you really don't need much to go with it.

  • Heat a pan with a tsp of oil on medium heat. Add the garlic and cook for 30 seconds.

  • Add all the chopped veggies except broccoli, and saute for a couple of minutes.

  • Add the can of cream of corn and a cup of water (or veggie stock) and simmer. If you want a thicker consistency, mix the cornstarch in a tablespoon of water and add to the simmering soup.

  • Add salt and pepper.

  • Add the chopped tofu

  • Add the broccoli. 

  • Remove from heat before the broccoli discolors (will happen in 4-5 minutes).

  • Add the vinegar.

  • Enjoy a steaming bowl garnished with soy sauce!

  • Fried noodles as a great garnish if you are entertaining or simply want to jazz it up a bit.




2 tbsp finely chopped cabbage

2 tbsp finely chopped carrot

2 tbsp finely chopped onions

2 tbsp finely chopped green pepper {capsicum}

2 tbsp finely chopped french beans

2 tbsp chopped broccoli
2 garlic cloves

1 cup tofu cubed

I can cream of corn

1 tsp soy sauce (for garnich)

1/2 tsp vinegar

1/2 tsp cornstarch (optional)

1 cup vegetable stock or water

1 tsp oil

Salt to taste

Pepper to taste
